Mint Rice (Pudina Rice) - Vegan Recipe Mint Rice is a delicious and fragrant Indian dish made with rice and mint leaves. “Pudina” is the Hindi word for mint leaves. Mint leaves 🍃are used widely over Indian cuisine to prepare chutneys, curries, biryanis and many rice recipes This is also a perfect lunch box and meal prep recipe which can be prepared in a jiffy. You can also add vegetables like potatoes, peas, carrot, beans and cauliflower to make it more wholesome. Full recipe video - https://www.youtube.com/watch?v=SR0NU0tAJ6g ✅Check out the recipe instructions below, don't forget to SAVE & SHARE it with your friends who might enjoy this recipe 🌿Ingredients🌿 Coriander Leaves - 1 Tbsp (optional) Mint Leaves - 8-10 Tablespoons Ginger - 1 Inch Garlic - 3 cloves Green Chilies - 2-3 Ingredients for the overall rice Oil - 2 Tsps Mustard Seeds - 1 Tsps Urad Dal or Black Split Gram - 1 Tsp Cashews - 2-3 Tbsp Garlic - 4-5 cloves Green Chili - 1 Onion - 1 Small Mint Paste - 5 Tbsps Cooked Rice - 250-300 Grams Salt - 1 and Half Tsps or as per taste Juice of half a lime - Optional 🌿Steps🌿 Prepare the Mint Paste 👉🏾 To the blender, add coriander leaves, mint leaves, ginger, garlic, chilies, water and blend. 👉🏾 You can prepare this in a big batch and store upto 7-10 days in the refrigerator Prepare the tempering 👉🏾Heat a pan, and add oil, followed by mustard seeds and urad dal - once they start to crackle 👉🏾 Add cashews and cook till they are golden 👉🏾 Then add finely chopped garlic and cook for 2 mins 👉🏾 Add slit green chilies and finely chopped onion and cook just for a minute. 👉🏾Add the Mint Chutney or paste to the pan and cook for 3-4 minutes over medium heat and add the cooked rice followed by salt. 👉🏾Mix everything well and top it up with some lime juice but it’s optional This is a perfect recipe when you have leftover rice 👉🏾Follow for Delicious Vegan Recipes and don't forget to save and share
